Zotter rock pear on buttered bread. Almost forgotten and yet back in fashion: the rock pear was once widely used, but now the flavoursome varieties from North America are conquering gardens. Rock pears are not classic pears, but are similar in taste and appearance to blueberries, although they also have a slight marzipan flavour. Perfect for an intensely fruity rock pear layer, which is rounded off with a little white chocolate and a squeeze of lemon. It is accompanied by a delicately melting hazelnut praline flavoured with aniseed, cardamom, salt and more. Topped with crispy brown bread crumbs made from toasted brown bread tossed in butter. Covered in milk chocolate with a 50% cocoa content.
