The oil contained in coconut butter has a very low melting point. This is why the puree is wonderfully spreadable at cool room temperature, solid in the fridge and almost liquid from approx. 23°C.
When the puree solidifies again, the coconut oil can settle on top and form a white layer. Simply stir again.
