The French company Organica, based in L'Haÿ-les-Roses, a town 9 kilometres south of Paris, specialises in the gentle freeze-drying of organic strawberries, organic blueberries, organic blackberries and organic pineapple. The process begins by freezing the water contained in the fruit. During the subsequent freeze-drying stage, this water is removed whilst the fruit’s internal structure is preserved. This is made possible by a process known as ‘sublimation’: the ice crystals in the fruit transition directly into a gaseous state without first turning into liquid. As a result, small fruits such as blueberries and blackberries largely retain their original size, but lose a significant amount of weight: 112 g of fresh blueberries and blackberries are reduced to just 16 g. The drying process gives the fruit a spongy texture, making it ideal for adding to muesli or smoothies. When milk is stirred into the muesli or water is added to the smoothie, the cells reabsorb the liquid. This means that pure organic fruit can be enjoyed even outside the harvest season.
