Herbaria Tutto mio. Organic spice mix for fried antipasti, Mediterranean stews, colourful salads, lukewarm oven-roasted vegetables, or for pickling mushrooms and vegetables. All ingredients have been deliberately left coarse or whole. When freshly ground in a mortar, the essential oils of the aromatic seeds and coarsely chopped herbs are released with particular intensity. Alternatively, simply leave them as they are for a rustic crunch with character. Fry the vegetables with Herbaria Tutto mio (finely ground in a mortar or mill), a little salt and sugar until al dente. Deglaze with vinegar, transfer to jars, cover with olive oil and leave to infuse in the fridge for approx. 12 hours.
