For a dry rub, use 2 tsp of Coffee BBQ per 100g of raw meat, rub it in, leave it to marinate, then cook gently over a medium heat. Alternatively, sear the meat first, then season and finish cooking gently. Delicious with a splash of fresh lemon juice to finish.
