BioVegan Organic Baking Mixture Pumpkin Spice Pancakes. With this handy baking mix, you can whip up golden, fluffy pancakes in no time at all. The finely balanced blend of spices gives them a lovely autumnal flavour, evoking cosy days during the cooler months. Whether for a hearty breakfast, a Sunday brunch or as a sweet afternoon snack – treat yourself to Pumpkin Spice Pancakes with icing sugar, apple sauce, maple syrup, nuts or fresh fruit.
You will need:
• 270 ml soya drink
• 140 g apple sauce
• a little oil for frying

Method:
  1. Put the pancake mix, soya milk and apple sauce into a bowl and whisk everything together until you have a smooth batter.
  2. Add a tablespoon of oil to a non-stick frying pan and heat over a medium to high heat. Pour two tablespoons of batter into the pan for each pancake and cook until golden brown (approx. 2–3 minutes). Flip the pancakes as soon as bubbles start to form on the surface, and cook them on the other side for a further approx. 1–2 minutes.
