Bauck Organic Quick Fruit Cake Baking Mix. Juicy and full of flavour, this quick fruit cake is a treat for every occasion. The gluten-free sponge can be baked creatively with a variety of different pieces of fruit, making it ideal for a spontaneous coffee break or as a quick snack between meals.
It's that simple:
Add these ingredients for 1 bag (= 1 springform tin):
3 eggs, 125 g soft butter, 50 ml milk, fruit of your choice
Vegan preparation: 50 g soya yoghurt, 50 g nut butter (e.g. light almond butter), 150 ml plant-based drink (soya or oat drink), fruit of your choice
- Prepare fruit of your choice. Preheat the oven to 180 °C with top/bottom heat and grease the springform tin (Ø26 cm).
- Place 1 bag of fruit cake mix in a bowl and mix with the butter, milk and eggs to form a smooth batter.
For the vegan preparation, place 1 bag of baking mix in a bowl with the nut butter, plant-based drink and soya yoghurt and mix into a smooth batter. - Pour the fruit cake batter into the springform tin and smooth out. Then top with the fruit of your choice.
- Bake the cake in the middle of the oven at 180 °C for approx. 45 minutes. The baking time varies depending on the fruit. The manufacturer recommends 45 minutes for an apple cake and 30 minutes for a cherry cake.
For one cake tin, use both bags of baking mix and double the amount of ingredients.
