Application:
Soak the barley soup for 6 hours, taking care to drain it before cooking. To prepare 3 servings, take 200 grams of barley soup, 2 carrots, 1 stalk of celery, 1 small onion, a sprig of parsley, extra virgin olive oil, salt and black pepper. Chop the vegetables and brown them for a few minutes in extra virgin olive oil, then add the previously washed barley soup. Add plenty of water or vegetable stock and bring to the boil. Cooking time is approximately 55-60 minutes.
