dennree Organic Chickpea Flour, gluten-free. Chickpeas are legumes and belong to the butterfly flower family. They are frequently used especially in Oriental and Mediterranean cuisine. For the gluten-free Chickpea Flour, ripe chickpeas are dried and finely ground. With its nutty-sweet flavour, it gives dishes such as falafel, pancakes, patties, flatbread and desserts an Oriental touch.
Recipe for quick falafel (approx. 2 pieces)
Ingredients:
200 g chickpea flour, 1/2 tsp baking powder, 1 tsp cumin, 1 onion, 1 clove garlic, 1 handful parsley, 1 tbsp olive oil, 1 tbsp lemon juice, 150 ml water, salt
Preparation:
- Mix the chickpea flour, baking powder and cumin together. Peel the onions and garlic, wash the parsley and finely chop everything. Add the fresh ingredients together with the olive oil and lemon juice to the dry ingredients and mix well.
- Bring the water to the boil, add little by little and mix until the mixture has a smooth, porridge-like consistency. Season the dough with salt and leave to rest for 10 minutes.
- Form small balls with wet hands and fry in a pan over a medium heat with plenty of oil on all sides.
Serve with a delicious yoghurt dip. Enjoy your meal!
